Sculpin / Baitfish (Rivers)
No hatch and no season — this is in the water every month of the year, so it's always a fair bet when nothing is showing on top.
This one doesn't shoal and it doesn't show itself — a bullhead spends its life wedged under a stone on the riverbed, and the only time it matters to a trout is when something big enough to actually hunt one comes looking. That's a narrower question than it sounds: bullheads live in nearly every clean river across these islands and much of Europe besides, but they're only a serious food source where a genuinely large, territorial trout has taken up residence, since anything smaller can't be bothered chasing something this well hidden. Alpine rivers with marble trout over three or four pounds are the headline water for this — the bullhead becomes a real part of the diet at that size — and the same holds, at a smaller scale, wherever a big ferox or cannibal brown has staked out a pool elsewhere in Europe. Present all year, March into November on the water temperature that matters, so there's no season to wait for — only a fish big enough to want one.
